We’re buzzing with excitement for the 7th installment of Chef Angie Brown’s Chef Series!
Each month, Chef Angie has gathered various local chefs to join her in the kitchen to create and collaborate on an innovative menu and tasting experience. These creative collaborations infuse ingredients, skills, and personal stories into an elegant five-course tasting menu.
Join us on September 15th from 6-9 pm. Chef Angie Brown has partnered with Chef Chaz Brown to produce a 5-course Trinidadian & Southern-inspired dining event. Dishes will be served on vintage plateware from Chef Angie’s private collection and will be accompanied by personal stories, anecdotes, and one-on-one guest interactions.
ABOUT CHAZ
Chef Chaz Brown was born in Lake Charles, Louisiana, to a Trinidadian father, Charles, and Yolanda, a (somewhat) Southern mother. He has always had a love for cooking.
He spent summers at his family’s restaurant, The Blue Crab, on Trinidad’s small sister island: Tobago. There, he witnessed his family’s generational recipes being cooked from the source by his uncle Kenneth Sardinha, Aunt Alison, and their Daughter, celebrated chef Debra Sardinha, who is a Culinary Ambassador to the island.
Whether it was spear fishing in the Bahamas for lobsters, or learning to butcher a whole goat at Nassau’s Travelers Rest, he was smitten with the food of the Caribbean

KING FISH - Trinidadian “fish steak”, red beans, rice w/ Chadon Beni, smoked choka

SWEET POTATO CAKE - with walnut ice cream
